Mono 90 is a mono-diglyceride ester (90% monoglyceride) of fatty acids from vegetable sources.

It is widely used by the food industry in a variety of products, acting as an emulsifier, stabilizer, thickener, defoamer and body agent.

Among its functions are: providing volume, smooth texture, increased stability, formation of complexes with starch, aeration agents and longer shelf life. It is a GMP additive (INS471).

*GMP additive: use is limited to the quantity necessary to comply with Good Manufacturing Practices (GMP), that is, sufficient quantity to obtain the necessary technological effect.
