Fat-Soluble Double Caramel is a class IV caramel obtained by controlled heating of food grade carbohydrates. To promote caramelization and achieve double dye power, both ammonia and sulfite compounds must be used as reagents. In this way, a dye classified as class IV is obtained, with high color intensity. Subsequently, with the addition of an emulsifier (polysorbate) a product that is soluble in fat systems is obtained.
