Concepta Ingredients, a business unit of Grupo Sabará, always pursuing quality, innovation, and technology to provide solutions for diverse consumer demands, offers the national market a complete line of caramels developed by Nigay SAS, a French company specializing in the caramelization process.

With over 163 years of history, the family-owned company Nigay has extensive experience in manufacturing caramels used in various forms (liquid, paste, powder, or crystals, flakes, and crunch) by artisans and food industries. It has established itself at the European and international levels as a specialist, thanks to its recognized know-how in aromatic caramels, caramel colorants, caramel syrups, and special caramels. The lines currently handled by Concepta Ingredients are:

Caramel Syrups

Produced through the controlled caramelization of sugar and presented in liquid form with a color ranging from light brown to dark brown, they impart caramel flavor and aroma to the final product. Ideal for use as syrup, they can be offered with varying viscosities thanks to the addition of a thickener, which prevents caramel migration in dairy desserts and provides greater visual appeal, especially for ice cream decoration. They can be applied in syrup toppings, desserts, flavorings, ice creams, nutrition products, creams, and artisanal products. Available formulations: 1395 SMA6, 1400 SMA3, 1365 – 25, and SALSOISE P5.

Caramel Flakes and Powder

The Caramel Flakes and Powder line consists of different types and flavors of caramel crystals obtained after the controlled thermal treatment of sugar with other ingredients. The solidified caramel is broken and sifted, resulting in crystals ranging from 0.5mm to 8mm. Their applications include cakes, cereals, cookies and biscuits, powdered toppings, desserts, chocolates, and ice creams. Available formulations: EN 5020, EN 3000, CRKS 24, EC 01 – Special for Ice Creams, EC 03 – Special for Ice Creams, F 0001, and F 0002.

Pastose and Viscous Caramels

The Pastose and Viscous Caramels line consists of ready-to-use products for toppings, fillings, and mixes, providing distinctive flavor and texture to the final product. These caramels are produced through the controlled caramelization of sugar and the addition of other ingredients such as milk, butter, honey, malt, chocolate, fruit extracts, and non-hydrogenated vegetable oils. They can be used in breads, cakes, desserts, chocolates, and artisanal products. Available formulations: FG 134 AV and FB 84 S.
