Ingredients:
- 2 eggplants, sliced lengthwise and approximately 3mm thick
- 1 tablespoon sunflower oil for grilling
- 200g goat cheese or chestnut cheese
- 1 tablespoon liquid brown sugar
- Salt to taste
Method of preparation:
- Heat an iron or non-stick frying pan and gradually grease it with soy oil. Heat well and grill the eggplant slices on both sides.
- Stuff with a little goat cheese or chestnuts and roll up. When the rolls are ready, sprinkle some liquid brown sugar on top. Serve at room temperature.
