Australian bread
Ingredients:
- 240g white wheat flour
- 120g whole wheat flour
- 120g rye flour
- 10g cocoa powder
- 1 teaspoon of salt
- 125g of Organic Liquid Brown Sugar
- 10g of dry organic yeast
- 50g butter
- 240ml of warm water
- Cornmeal for sprinkling
Method of preparation:
- In a large bowl, mix the flours, cocoa powder, Organic Liquid Brown Sugar and salt.
- In the measuring jug, dissolve the yeast in the warm water.
- Add the yeast water to the dry ingredients all at once and mix well until everything is incorporated. Finally add the butter in three stages, kneading well with your hands.
- Knead the dough for about 15 minutes.
- Shape the dough into a ball and return to the bowl. Cover with a damp kitchen towel (or film) so it doesn't dry out while it ferments. Let it rest for about 2 hours, or until it doubles in size.
- Transfer the dough to the counter and cut in half with a baker's spatula (or knife). Gently shape the loaves on the counter to form an oval shape, typical of Australian bread.
- Sprinkle a large baking tray with cornmeal and place the bread next to each other, leaving space between each one. Cover again with the damp cloth (or film) and let it rest for another 1 hour.
- Preheat the oven to 180ÂșC.
- Sprinkle cornmeal on the surface of the bread. Place in the oven to bake for around 30 minutes until golden.
