Tapioca Pudding
Ingredients:
- 2 cups of granulated tapioca tea
- 350ml coconut milk
- 3 tablespoons of Licuri Coconut Oil
- 1 and ¼ cup of sugar
- 2 cups freshly grated dried coconut
- 1 to 3 cups of water
Method of preparation:
- Grease a baking tray with 1 tablespoon of Licuri Coconut oil and 1/3 cup of sugar, set aside in the refrigerator.
- In a bowl, mix the tapioca, coconut milk, the rest of the Licuri Coconut oil and sugar, the grated coconut and, little by little, add the water as the tapioca balls become hydrated. The thicker the better, so don't overwater.
- Pour the dough into the pan and bake in a preheated oven at 180°C for about 1 hour and 20 minutes and until golden.
- Wait for it to cool down and release it. Serve plain or with fresh fruit or fruit syrup.
