White Hake with Licuri Vinaigrette
Ingredients:
- 4 white hake fillets or other fish of your choice
- 4 firm tomatoes, cut into small cubes and seeded
- ½ yellow pepper cut into small cubes
- ½ red pepper cut into small cubes
- 3 tablespoons chopped red onion
- ¼ cup fresh dried coconut cubes
- 4 tablespoons of Licuri Coconut Oil
- 3 tablespoons of apple cider vinegar
- Parsley to taste
- Chives to taste
- Salt to taste
Method of Preparation:
- In a bowl, mix the tomatoes, peppers, coconut, onion, vinegar, 2 tablespoons of Coco Licuri oil, chives, parsley and salt. Leave the flavor to develop for 10 minutes. If necessary, add more oil, vinegar or salt.
- In a heated non-stick frying pan, add 1 to 2 tablespoons of Licuri Coconut Oil. Grill the fish over high heat, sprinkle with salt and let it brown. Turn over and let it brown on the other side, sprinkle with salt again.
- Pour the vinaigrette over the fish and serve.
